Chicken Puttanesca Pasta
Here’s what you’ll need to get started:
Rigatoni
Olive Oil
Ground Chicken
1/3 cup Coconut Milk
1 can of Tomato Paste
1/2 onion
Garlic
1 1/2 cups Baby Heirloom Tomatoes
3 Tbs capers
1 cup Black Olives
1/3 cup Pasta Water
Pepper
2 tsp Herbs de Provence
Fresh basil
Cook Time: 35 Minutes
Step 1: Boil water and add the rigatoni to cook. Strain and set aside.
Step 2: In a pan add olive oil, ground chicken, coconut milk, tomato paste, onion, diced garlic, and heirloom tomatoes, and cook.
Step 3: Mix in capers, olives, and pasta water to thin the sauce and stir.
Step 4: Season with Herbs de Provence, salt, pepper, and optional chili flakes.
Step 5: In a large bowl, mix the sauce and pasta together, top with fresh basil, and enjoy!
