Summer Orzo Salad
Here’s what you will need to get started:
Orzo
Garbanzo beans
Baby heirloom tomatoes
Red onion
Cucumber
Olives
Capers
Basil
Feta
Olive oil
Balsamic vinaigrette
Salt
Pepper
Avocado
Cook Time: 45 Minutes
Step 1: Boil a pot of water, and add in the orzo. Cook for 7-8 minutes. Remove from heat, strain and place in the refrigerator for 30min or until chilled.
Step 2: While you wait for the Orzo to chill, chop baby heirloom tomatoes, 1/4 red onion, 1/2 cucumber, and fresh basil.
Step 3: In a large bowl, mix the orzo, garbanzo beans, baby heirloom tomatoes, red onion, cucumber, olives, capers, basil, and feta cheese. Drizzle olive oil and balsamic vinaigrette, add a pinch of salt and pepper, and mix.
Step 4: Top with fresh avocado and enjoy
